1/2 cup Avocado Oil
2 Limes, juiced
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Sea Salt
Pinch of Cayenne
2 medium-large Zucchini, spiralized (I use this spiralizer, click here)
5 ounces Cherry or Grape Tomatoes, halved or quartered
2 cups canned/cooked Chickpeas, rinsed and drained
1/2 cup fresh Cilantro
1 cup Corn
1 Avocado, diced
1/2 Purple Onion, diced

Combine all the ingredients in a serving bowl and toss well. Keep aside for 15 minutes so that the flavours blend well. Serve immediately
